Kofta Dawood Pasha is a wonderful Egyptian dish that is easy to prepare.

The origin of this recipe is Turkish, introduced by the Turks during the period of occupation of Egypt, but as the Egyptian habit, the people of Egypt added to it the authentic Egyptian taste.

in this recipe, I will share the authentic Egyptian Kofta Dawood Basha Recipe.

Egyptian Kofta Dawood Basha

INGREDIENTS

  

  1. Half kilo ground beef
  2. 1 medium onion, finely chopped
  3. Half teaspoon salt
  4. Half teaspoon black pepper
  5. Half teaspoon cinnamon powder
  6. Half teaspoon seven spices or mixed spices
  7. 2 tablespoons oil
  8. 3 minced garlic cloves
  9. 2 tablespoons tomato paste
  10. 1 cup finely chopped tomatoes without skin
  11. 1 pinch sugar
  12. One and a half cups hot water
  13. 1 Pinch of cinnamon, salt, seven spices, cinnamon. (these are for the suace )

INSTRUCTIONS

 

  1. In a large bowl, ground beef
  2. Add the onion, a spoonful of salt, cinnamon, seven spices and black pepper
  3. Stir the meat with the spices well until the spices and onions are completely coated inside the meat tissues
  4. Form the meat into medium-sized balls
  5. Place the kofta in the refrigerator for 30 minutes, until all the ingredients are set
  6. Put two tablespoons of oil in a frying pan, and when the oil is hot, put kofta and turn it on all sides
  7. After the kofta is browned, take it out of the pan and put it on a plate
  8. In the same pan, put the chopped garlic and saute it until it reaches a golden color
  9. Put two tablespoons of tomato paste
  10. Stir the tomatoes with garlic, then add one tablespoon of sugar (small cube)
  11. Add a cup finely chopped tomatoes without skin
  12. Add a cup and a half of hot water and mix well
  13. Add a pinch of salt, cinnamon, seven spices, black pepper, and stir well
  14. Put the kofta in the tomato sauce and leave for 10 minutes
  15. Place Dawood Pasha’s kofta in a serving dish and garnish with a little fresh parsley

White Rice

INGREDIENTS

  4. Half Teaspoon Mastic
  5. Half Teaspoon Salt
  6. 2 Tablespoon ghee
  7. 2 Tablespoon Oil

INSTRUCTIONS

 

  1. Put two tablespoons of ghee and oil in a cooking pot
  2. Add half a tablespoon of mastic
  3. Add the cardamom and leave it in the pot for 20 seconds – till you start smelling the cardamom then add the rice
  4. Stir the rice well for 5 minutes – this step will help you get the fluffy rice
  5. Add 4 cups of hot water
  6. Cover the rice well and leave it on a high temperature until the amount of water reduces
  7. When the water decreases, reduce the temperature very much and cover it
  8. When the rice reaches its fluffy form, you can now serve it

NOTES

In this recipe, do not use broth because it changes the taste and makes the color darker. Just enjoy the taste of mastic and cardamom.
