Egyptian Peas (Bazella) With Carrot And Meat Casserole

Peas are one of the best vegetables that you can cook because it tastes delicious and is very healthy and also easy to prepare. In this recipe, I will share with you the delicious Egyptian way to make peas (Bazella) with carrots and meat.

But first, I will clarify some points that are important to you when making Egyptian peas.

Tips For Choosing Fresh Peas or Bazella.

There are some notes that you should take into account when buying fresh peas

1-Color

Always choose the bright green pea because it is sweeter in taste and evidence that I am fresh – there are types that are less green in nature, but often they are not tasty – and it is also preferable to look for the Egyptian peas, which are delicious by nature.

2- Size

Choose the peas that are large in size, but note that they are not dry because if they are dry, this indicates that they are not fresh.

Note: If you do not find fresh peas, you can buy them frozen because they retain a good taste when frozen

In order to cook, feed a casserole with peas with meat and carrots, it must be made with meat syrup because it gives it a very wonderful taste

Preparing the Meat Broth

Note: the quantities of ingredients are listed in the recipe ingredients. (in the next Section )

The best type of meat for making a peas casserole with meat and carrots is veal, preferably Veal Rack. because the presence of the bone gives a different and wonderful flavor to the pea casserole.

The second step is to add spices, add a pinch of salt, and a secret mixture to the meat.

My secret mixture for meat is roasted and ground black pepper and cardamom, (which gives a wonderful taste to the meat)

Rub the meat with the spices on both sides and make sure that the spices have penetrated the meat well.

Heat a pot on the fire, then put a spoonful of ghee, then add some mastic seeds to it and stir them well.

When the mastic begins to melt, add the pieces of meat to the pot, then leave them on each side for 30 seconds only (until the color of the meat changes), then remove them from the pot.

Now put the bay leaf, two cloves of cardamom, and a half teaspoon of ground celery seeds (half a spoon per kilo of meat)
Then add half a small chopped tomato, some sliced carrots, onions, some celery sticks, then add two cups of hot water.

Note: Do not add too much water (what we need is for the water level to cover the meat)

On medium heat, leave the pot for 45 minutes

Egyptian Peas (Bazella) With Carrot And Meat.

INGREDIENTS

  

  1. 1 kilo Peas
  2. ½ kilo Carrots
  3. 2 Potatoes (OPTIONAL)
  4. 1 teaspoon Ghee
  5. 1 Small onion chopped
  6. 3 cups tomato juice
  7. 2 tablespoons tomato paste
  8. ½ teaspoon Sugar (optional)
  9. 1 Kilo Veal Rack meat
  10. 1 Teaspoon Black pepper + ground cardamom
  11. 1 Teaspoon Salt
  12. ½ teaspoon celery seeds
  13. 4 Laura paper
  14. 2 Cardamom
  15. (tomatoes / carrots / onions / celery)
  16. 4 Mastic cloves
  17. 2 Hot water
  18. 1 teaspoon ghee

INSTRUCTIONS

 

  1. On a hot cooking pot, add a teaspoon of ghee
  1. Add two tablespoons of chopped onion and stir until it changes color only (15 seconds)
  2. Add the peas
  3. On low heat, add the carrots, then stir the mixture well for 5 minutes (after 5 MIN you can add the Potato if you like it)
  4. Add tomato juice (after juicing the tomatoes, you must drain the peel well)
  5. Add two tablespoons of tomato paste (to give you a beautiful red color) and then add half a tablespoon of sugar)
  6. Add a quarter of a teaspoon of coriander, a quarter of a teaspoon of salt and a pinch of black pepper, and stir the mixture well
  7. When the peas and carrots boil, add 2 cups of the meat broth then leave it for 5 MIN
  8. Put the peas in a casserole, then add the meat
  9. Put the casserole in the oven on the bottom rack and set the temperature to 180 and leave it for 40 minutes
  10. After 40 Minutes take it out of Oven

NOTES

It is preferable not to add a large amount of salt to the soup until we are able to adjust the vegetable salt as desired
