Foul Mudammas is a famous Egyptian food, I can say that it is the most famous in Egypt because it is the main popular breakfast and is eaten by all Egyptians.

As Egyptians, we love fava beans and have created many recipes for them.

Not only that but there are Egyptian cities that invented recipes in their name, such as the Alexandrian beans, which were invented by people in Alexandria.

Are there certain times when Egyptians eat Foul Mudammas  (Fava Beans)?

Foul Medames is often eaten for breakfast (always served with falafel and green salad), but some people may eat it for dinner.

On the other hand,

In Ramadan, it is the main dish of suhoor for the Egyptians,

Suhoor is the meal that Muslims eat in Ramadan, at the end of the night to help them get ready for fasting.

The reason why beans are the main dish at suhoor is that beans help to feel full throughout the fasting hours.

What Kinds of Foul Mudammas  (Fava Beans) should you use for all recipes?

Fava beans are sold canned or dry.

I usually use the canned type because it is easy and also saves me a lot of time in preparing dry fava beans.

But the original Egyptians (especially in the Egyptian countryside) cook dried beans because it has a special taste when preparing Egyptian recipes with Fava beans prepared at home.

So I will be sharing with you the authentic way to prepare dry Fava beans

How to prepare Dry Fava beans?

INGREDIENTS

  

  1. Half a kilo fava beans
  2. 2 liters soaking water
  3. 1 Cup Lemon juice
  4. 1 tomato
  5. 3 Cups Hot water
  6. ¼ cup yellow lentils, soaked in water and drained
  7. 1 tablespoon tomato sauce
  8. 1 grated carrot
  9. 1 tablespoon starch

INSTRUCTIONS

 

  1. Put the beans in a bowl of water and wash them inside this bowl.
  • You may notice some beans floating on the surface of the water, you must get rid of them (because they are empty and therefore float on the surface)
  1. Change the water and soak the fava beans in water for 24 hours (add some lemon juice)
  2. After 24 hours, the beans will turn into this shape
  3. Now, the way to put the beans in the aluminum bowl:
  • put the first layer of beans, then a layer of carrots, then a layer of beans, then a layer of lentils and the last layer of beans

  2. Put the beans, then put the lentils on top

  4. Put the tomato
  5. Put hot water to cover the beans completely

  8. Check the beans every 30 minutes, and when the water evaporates, add hot water
  9. After 4 hours, take a plate and put in a little water, a tablespoon of tomato paste and starch, and two tablespoons of lemon juice, stir them well, then add them to the beans and leave for 30 minutes.
  10. Now the fava beans are ready to be used in various recipes
