Put the kunafa in a bowl and cut it with your hand, then add a spoonful of ghee to it
Stir the kunafa with the ghee well, then put it in a small oven tray and press it well
In a preheated oven, place the kunafi on the bottom rack for 5 minutes (or until golden in color).
When the kunafa comes out of the oven, add the cold kunafa syrup (about ½ cup).and let it cool
In a large bowl, add the cheese
Using a food mixer, mix the cheese well (the cheese should be at room temperature so that it is easy while whisking)
Add the whipping cream and mix it well with the cheese using a food mixer
Add powdered sugar, a spoonful of vanilla and a spoonful of rose water
Mix the above mixture well
Pour the cheese over the kunafa and leave it in the fridge until it hardens
Garnish konafa cheesecake with a few crushed nuts and dried roses (to get the red color, add some roses)
